Hello everybody, since there was no school today, I felt the need to sleep in. Lol, now we are having breakfast at lunchtime. Don't say a word, you've done it too. For breakfast its grits, eggs, sausage and toast. Now, the trending thing right now is "Salt vs. Sugar" in the grits. Everybody knows its salt (with butter and cheese of course). The reason people eat sugar in their grits is because as a child in order to get them to eat the rice or grits, their mom put sugar in it to make it sweet and it became the normal thing to do. They grew into adults who continued to do it and passed it on to their children. End of debate, lol.


I must give my daughter credit, she makes awesome toast, lol.




CREAMY CHEESY EGGS

2 large eggs

¼ cup milk

2 tbsp. butter

Salt and pepper

DIRECTIONS

In a small bowl whisk eggs, milk and salt and pepper. In a small skillet heat butter over medium heat, add egg mixture. After a few seconds add cheese (I prefer American sliced). Let cook until the egg starts to thicken, then stir. Cook for about 2 min and enjoy.

SUNDAY (5/29/16)

Hello everybody, hope you all have had a blessed day because I have! Well, I made a simple dish today because my daughter had a few friends over. I had extra folks in the house but no one to talk to while I was cooking, UGH! LOL, no worries. Today's menu was, get ready.......Fried Chicken Wings, Dirty Rice (let me tell you, no fast food chain has nothing on me), and green beans (the teenager's choice) and rolls. The recipe for the dirty rice is below so don't get your pants in a bunch. Since there was nobody to talk to while cooking, so I just thought about the Word delivered today in church. We all make mistakes, but we need to forgive ourselves and stop doing things we know are wrong because we are moving on emotions and good feelings. Think before you act, make good choices and laugh out loud (it's good for the soul).

Dirty Rice

1- 14oz box of Minute Rice
1/2 small Vidalia onion diced
1/2 small Green, Yellow, Red, and Orange Bell Peppers Diced
1-16oz Neeses Country Sausage (hot)
6 cups of Chicken Broth

DIRECTIONS
In a large stock pot cook your sausage on medium heat, now you can cut it into small pieces before or after you fry it, but it will be easier if you dice it after). Place on a lined plate to drain. Drop your diced veggies in the grease and cook 2 minutes (season with garlic salt, seasoned salt, and black pepper) I don't give measurements because it's according to your tastes, I just tell you what to use. Add your rice, and chicken broth, I would recommend to add a little more seasoning at this time. Since this is minute rice it will only take about 2-3 minutes to cook. The rice mixture will absorb all of the liquid. This will make about 8 servings (see the pot). You can add some hot sauce or cayenne pepper if you want it a little spicy. Enjoy.
