Hello everybody, there was a lot on my mind today, so I didn't cook anything, but I did give a recipe for something that I like. It was yesterday too, but you know how it is, the next day it seems to try to weigh in much heavier. I try to teach my daughter to be nice to everyone, but choose your friends wisely. Sometimes as adults we don't do that, we lead with emotions instead of spiritual (sound) judgement. It almost always shows us in the end what we should have done better. Sad thing is we consistently do it., smh, stop it. At some point you must wise up, people are supposed to have the love of Christ in their heart. That means they should put your best interest at the forefront, but they are not there when things get rough or the devil is trying his best to beat you down. Listen to me, look to God, not to man. People will let you down every time, because you aren't supposed to trust in them anyway. The only reason people hurt you is because you gave them the authority to do so, don't allow them to. Love everyone, trust in God. Remember God loves you and so do I!!!!!!!



DEVILED EGGS

6      EGGS (HARD BOILED)
1/4  CUP MAYO
3 TBSPN SWEET PICKLE RELISH
1/2 TSPN SUGAR
SALT AND PEPPER
PAPRIKA

DIRECTIONS

SLICE EGGS IN HALF, TAKE YOKE OUT AND PLACED IN LARGE MIXING BOWL, AND PLACE WHITES ON SERVING PLATE. SMASH THE YOKES WITH A FORK UNTIL YOU HAVE NO LARGE PIECES. ADD IN ALL OF THE OTHER INGREDIENTS AND MIX WITH FORK UNTIL SMOOTH. SPOON MIXTURE INTO THE HOLE OF THE EGG WHITE AND SPRINKLE WITH PAPRIKA, PUT IN THE FRIDGE FOR AT LEAST 30, MORE WOULD BE BETTER. ENJOY....

Hello everybody, today was a good day. Everyday is a good day, and do you know why class? (I just had to, lol) Because we can control our day, no we can't control the actions of others but if we are trusting God and walking in love and prayer, no matter what "TODAY WAS A GOOD DAY"(ICE CUBE, LOL). Food, fellowship, and fun; there is nothing that could be better than that combination. While at my bff's house (yes, i'm always there so mind your business), we were singing, laughing and just worshipping God.  She decided what was for dinner, shrimp (straight out of the water), thanks to her neighbor who is from Charleston, SC. Well, she didn't realize just how much work it was to clean 'fresh' shrimp, I think you can tell by the picture,
lol. Nevertheless, she cleaned them really well, then seasoned them and sauteed them and can you say YUMMY! I hope you enjoyed your good day with a good meal, good times and some praise and worship. Never let your day dictate your attitude, let your attitude dictate you day...STAY POSITIVE!!!!!!


SAUTEED SHRIMP
2 LBS SHRIMP (IT WOULD BE WISE TO BUY THEM ALREADY CLEANED AND DEVIENED)
1/2 STICK OF BUTTER (SALTED)
2 TBSPN OLD BAY
1 TBSPN MINCED GARLIC
SALT AND PEPPER

DIRECTIONS
CLEAN SHRIMP, DRY WITH PAPER TOWELS. SEASON WITH ABOVE SEASONINGS, OR THE SEASONINGS OF YOUR CHOICE. IN A LARGE SKILLET ON MED HEAT, MELT BUTTER AND ADD GARLIC, THEN ADD SHRIMP. COOK 3-5 MINUTES (UNTIL SHRIMP ARE PINKWITH JUST A LITTLE BROWN. ENJOY.

Hello everybody, today (wooooo) is all I can say, lol. I had some good eats today. The gourmet salad at the hospital was awesome. It had a spring blend (lettuce), feta cheese, bacon, tomatoes, almonds, grilled chicken and balsamic vinegrette dressing. I know, your mouth is watering. Then for dinner at my bff's house (my guest blogger) we had....wait for it, fish tacos. They were awesome, the best part was the peach mango salsa. The best part of the dinner were the seafood stuffed clams.
Yes, you are not ready at all. It's like a crab cake on a clam shell (a real one, that you can clean and reuse). Kudos to my bff, my bff is better than yours. I love being over there, sometimes noisy but loving all of the time, just love it. I'm not gonna talk ya'll heads off, just a little word, pray, love and enjoy life and everything God has to offer.


SEAFOOD STUFFED CLAMS
 24 CLAM SHELLS (DON'T GO ASKING ME WHERE TO GET THEM, IDK THE BEACH...)
1/2 LB UNCOOKED SCALLOPS
1/4 LB UNCOOKED MED SHRIMP (PEELED AND DEVEINED)
1/2 CUP HEAVY WHIPPING CREAM
1 LG EGG YOLK
1/2 CUP BREAD CRUMBS
1 TBSPN DIJON MUSTARD
1 TBSPN WORCESTERSHIRE SAUCE
1/4 TSPN CAYENNE PEPPER
5, 5 OZ CANS OF LUMP CRABMEAT DRAINED (CHECK FOR SHELLS)
2 TBSPN MINCED CHIVES
2 TBSPN OLD BAY
OLIVE OIL SPRAY

DIRECTIONS
PREHEAT OVEN TO 450 DEGREES. PLACE SCALLOPS AND SHRIMP IN A FOOD PROCESSOR, COVER AND PULSE TO CHOP. ADD THE CREAM, EGG YOLK, MUSTARD, SALT, BREAD CRUMBS AND CAYENNE; COVER AND PROCESS UNTIL PUREED. TRANSFER TO A LARGE BOWL, FOLD IN CRAB AND CHIVES. PUT IN FRIDGE FOR 30 MINS.

WITH FLOURED HANDS SHAPE MIXTURE BY 2 TBSPNS INTO 1/2 IN. THICK PATTIES. LINE A COOKIE SHEET WITH PARCHMENT PAPER, OR FOIL. SPRAY ALL OF THE CLAMS WITH THE SPRAY, PLACE THE PATTIES IN THE CLAMS AND THEN PLACE ON THE COOKIE SHEETS. PLACE IN THE OVEN, COOK FOR 45 MINUTES UNTIL GOLDEN BROWN. YOU MAY HAVE TO COOK IN BATCHES SO PLACE UNUSED PORTIONS IN THE FRIDGE UNTIL READY. SERVE WITH SOME TYPE OF REMOULADE (NO, I'M NOT PROVIDING A RECIPE) ENJOY....

Hello everybody, today has been an eventful day. I had all of these plans of things that I was going to do today. However, I didn't get them all done. I did get marshmallow to piano lessons, but after that the obstacles came. Went home to get my grandmother some things to take to her in the hospital. Walked out of the house made sure the door was locked and realized that I didn't have my keys, they were on the couch. So, we had to catch the trolley (no complaints, it was free) to the hospital. The green and yellow trolley was really nice, and cold, that was our first time riding it.
 We get to the hospital and I gave my grandma her treat, a box of 90 calorie brownies. She ate one immediately. The calvary (the ones with an extra key) finally came. You know all of the time we say that I had planned to do, and I know God laughs because He is thinking hmmm, what you have planned and I'm not involved, let's see how that goes. I didn't begin my day as I normally do, with praise and prayer. So, that just shows you what can happen if you don't begin you day right.




GOOD BROWNIES WITH ICING

2 EGGS

1 TSPN VANILLA EXTRACT

1/3 CUP INSWEETENED COCOA POWDER

½ CUP ALL-PURPOSE FLOUR

¼ TSPN SALT

¼ TSPN BAKING POWER

FROSTING

3 TBSPN BUTTER, SOFTENED

3 TBSPN UNSWEETENED COCOA POWDER

1 TBSPN HONEY

1 TSPN VANILLA EXTRACT

1 CUP CONFECTIONERS’ SUGAR

DIRECTIONS

PREHEAT OVEN TO 350 DEGREES. GREASE AND FLOUR AN 8-INCH SQUARE PAN. IN A SMALL BOWL LIGHTLY BEAT YOUR EGGS, SET ASIDE. IN A LARGE POT MET ½ CUP OF BUTTER. REMOVE FROM HEAT, AND STIR IN SUGAR, EGGS AND 1 TSPN VANILLA. FOLD IN 1/3 CUP COCOA, ½ CUP FLOUR, SALT, AND BAKING POWDER. SPREAD BATTER INTO PAN. BAKE FOR 25-30 MINS, DON’T OVERCOOK.

TO MAKE THE FROSTING, COMBINE 3 TBSPN SOFTENED BUTTER, 3 TBSPN COCOA, HONEY, 1 TSPN VANILLA EXTRACT AND 1 CUP CONFECTIONERS’ SUGAR. STIR UNTIL SMOOTH. FROST BROWNIES WHILE THEY ARE STILL WARM (DO NOT USE A MIXER OR YOU WILL SIMPLY HAVE CHOCOLATE CAKE, USE YOUR HAND.)

Lazy Sunday

Hello everybody, today is a lazy Sunday for me. Marshmallow is with her dad, so I didn't do much cooking. I sort of cheated today, lol (don't judge me). Today I had, a rotisserie chicken from Harris Teeter, and I must say it was delicious. I'm going to buy me a rotisserie so that I can cook them myself. I made some mashed potatoes and green beans to go along with my chicken
 and voila, a Sunday dinner.  Today is Father's day, so I want to 'shout out' all the dads out there, whoop whoop to you guys. Doing everything you can to ensure the safety and well being of your children. Do know that you are totally appreciated, you may not hear it all of the time (neither do moms), but you definitely are. Know and understand that you're children are blessings that God saw fit to give you, and by you teaching, loving and being there makes God so happy (not to mention mom and the kids). Keep doing God's will for your family it will ensure a long and prosperous life for you. So in honor of dad who is probably gonna watch game 7 tonight, here is a game time snack we know he will love and easy to make.

PREHEAT THE OVEN AT 400 DEGREES. GET A LARGE COOKIE SHEET AND COVER IN FOIL. CUT THE BACON IN HALF. GET ON TATER TOT, AND ONE OF THE HALVED PIECES OF BACON. WRAP THE BACON AROUND THE TATOR TOT AND STICK THE TOOTHPICK IN TO HOLD IT IN PLACE. CONTINUE UNTIL ALL OF THE TOTS ARE DONE. PLACE IN THE OVEN FOR 20-25 MINUTES FOR THE TOTS AND BACON TO COOK, BACON SHOULD BE GOOD AND CRISPY, SERVE WITH YOUR FELLAS FAVORITE DIPPING SAUCE.

Hello everybody, I spent the night at my best friend's house(my guest blogger). I was supposed to be doing homework, but I fell asleep. Woke up this morning to a special guest, lol.
I guess he was waiting on me to wake up and play with him. What was hilarious was the fact that after a few minutes he stretched out like ugh girl hurry up and get yourself together I'm getting bored.
Breakfast for me this morning was a peanut butter and jelly sandwich that was very tasty if I must say so myself. Laying there with my 'bed mate' I was just thinking about how blessed I am. Even when it looks as if the walls are closing in and the sky is falling, I will not be chicken little running and screaming. I'm gonna relax, stay calm and still enjoy life, all of those hardships God has already taken care of so I'm gonna act like it. I know who my source is and because He loves me so much I will never have a need for anything. Please remember don't let troubles or obstacles stop you or dictate your day or life, when you do that you're not letting God's word work. That's not good, so don't do it, or I'm gonna spank you...lol. I won't have to because that situation will.

DIRECTIONS

PAT SHRIMP DRY AND PLACE IN LARGE BOWL, ADD GARLIC SALT, OLD BAY AND CAYENNE PEPPER. TOSS TO COAT SHRIMP COMPLETELY. POUR YOUR SEAFOOD BREADER IN A LARGE PLASTIC BAG. SET ASIDE. HEAT OIL IN A MED STOCK POT ON HIGH FOR ABOUT 3-4 MINUTES. PLACE SHRIMP IN THE BAG OF BREADER AND TOSS TO COAT, SHAKE OF EXCESS AND PLACE SHRIMP IN OIL. FRY FOR ABOUT 3-4 MINUTES OR UNTIL GOLDEN BROWN (USUALLY THEY WILL START TO FLOAT ON THE TOP OF THE OIL WHEN THEY ARE DONE.). REMOVE FROM OIL, AND DRAIN.

Hello everybody, hope all is well with you. My daughter had her first gig last night. A waitress, (yes, they had her pouring drinks oh my gosh). She looked amazing if I do say so myself, and I do.
Our church had a banquet to honor the retirement of the principal of the high school and the head mistress (principal) of the elementary school. It was a really nice event, the children (12-18) volunteered to serve and host. They looked awesome and were very professional. The attendees were able to choose their meal prior to the event. They had their choice of lamb, chicken or salmon, along with wild rice/gravy, summer squash and kale. I’m definitely not a fan of kale, cooked or not, but the meal sounded awesome. Marshmallow and I love salmon, it’s so flavorful and doesn’t take long to cook (she act likes she’s starving so I have to cook quick, lol). You know sometimes we are in such a hurry all the time that we rush everything without really taking the time to enjoy ourselves. Monday comes and we are wishing for Friday to come, then once Friday is here we are wishing Saturday would hurry up. Always rushing the time away, is not a good thing. Of course, we want the weekend to have fun without thinking about the responsibilities of work. Not thinking that you are rushing the time away years are flying by and you wonder why, it’s because you are speaking that into existence. Stop it, when Monday comes embrace it, enjoy your day at work reminding yourself that you are there to be productive, so do that. After, do the things you have to with joy knowing that you’re still alive to accomplish them, and those who are benefiting are being blessed. Make the most of your time, if God is continuing to give you a new day don’t insult Him by rushing them away.

1 COVE MINCED GARLIC
1 TBSPN SOY SAUCE
1 TBSPN LEMON JUICE

1 TBSN OLIVE OIL

DIRECTIONS

HEAT 1/4 TSPN OIL IN SKILLET ON MED HEAT, SAUTE GARLIC TIL BROWN. MIX GARLIC,SOY SAUCE, LEMON JUICE, HONEY, 1/2 TSPN OLIVE OIL, BROWN SUGAR, SALT AND PEPPER IN A BOWL THEN POUR INTO LARGE RESEALABLE BAG. ADD SALMON, SQUEEZE OUT AIR AND SEAL. SHAKE BAG AROUND TO COAT SALMON. MARINATE IN FRIDGE FOR AN HOUR. REMOVE SALMON FROM BAG, SHAKE OF EXCESS, PUT MARINADE TO THE SIDE. HEAT 1 TBSPN OIL IN SKILLET OVER MED HEAT. ARRANGE FILETS IN HOT SKILLET, PLACE LID ON THE SKILLET; COOK UNTIL SAMON IS BROWN ON EACH SIDE AND IS FLAKY. POUR MARINADE OVER FILLETS. SPOON LIQUID OVER OCCASIONALLY, 2/3 MINS PER SIDE. PLATE AND ENJOY.

Hello everybody, so I did my first bacon in the oven.
Well I started it and the kids took it out, lol.(yes I'm taking credit for it, lol). I forgot my daughter and her best friend said that they were going to be vegetarians. She has attempted this before, after 2 days it was a wrap(yes, 2 days).  I will do everything I can to help her be successful. She said only seafood, she doesn't even want to eat chicken now (my eyes are rolling around in my head like dice). Instead of the bacon they had cheesy tuna pasta with broccoli and a side of fruit.
  
Trying something new can be great, it will teach you things about yourself that you never knew. your limits and boundaries are tested and you feel a sense of accomplishment. Fun is another reason to try something new. Life should be about doing God's will, living life and having fun. Enjoy your day and your time, you only get one life so why not make the best of it. This way you won't have any regrets.

Hello everybody, Marshmallow and I have begun our healthier lifestyle. We do our workouts Mon, Wed and Fri we started out just walking,
and next week we will add some arms, then from there we will add more. We also decided to only eat out once a week, which will not only save money, but will help us to eat better. No sodas, except on the eat out days, I think this will help both of us get fit.

I made some macaroni salad, I really like it. Something light and
filling appropriate for our endeavors as well as the weather. We didn't have time to go home and eat, so we ate salads from Subway. I had the seafood and she had the chicken, it was so good no dressing was necessary.
This journey were on doesn't seem hard since we're actually doing it. You know a lot of times you are hesitant about doing something just because you are afraid of the unknown or how hard it's going to be. At some point you have to "man-up" (yes, I said it, what...lol). Put on your big girl panties (or big boy britches) and do it. You'll realize that once you've started it isn't hard at all, and your goal will be accomplished. You'll be ready to tackle the next goal. Start your day off  thanking God for that day and for loving you enough to allow you to see it, and thank Him for a good day, you can't control the actions of others, but you can control how you react.

DIRECTIONS:

BOIL MACARONI, RINSE TO REMOVE THE EXCESS STARCH, PLACE IN MIXING BOWL. ADD MAYO, THE MIRIPOIX (ONION MIXTURE, I'M FANCY), RELISH AND SUGAR. ADD IN THE SALT AND PEPPER GRADUALLY ACCORDING TO YOUR TASTES. ENJOY

Well let me go ahead and tell you about dinner tonight! I was asked to be a guest blogger on my bestie's blog! Mishie told me about it so long ago, I had plenty of time to do a blog because I've been feeling like cooking lately for my babies all five of them lol yes my mom included! Wink wink lol but really... I've just been busy. I pulled my blog up tonight and wow how I've abandoned my own... It's been since 2014 that I've last graced the pages of my own blog. I'm cleaning all the cobwebs and refreshing and revamping my own. There is this one, then there is 63 Shades of Gr33n. The latter is a sub blog dedicated to my gardening and plants and flowers.
It's so obvious how much I've got going but I got zucchini, lettuce, peppers, and tomatoes in pots. I know it's so late but the rain we get every afternoon will help everything to grow. We have had an awesome peachy year >See what I did there! < Haha the peaches were simply delicious but so disappointing when the birds and the bugs got to the last harvest. I was so looking forward to sharing with everyone that asked. I am excited to get everything in the back in the ground. Everything grows so fast and beautifully and the aromas and scents you get early in the morning are so very rewarding. Of course the harvest is the best- juicy green tomatoes, sweet crisp lettuce, yellow squash just everything! A tomato sandwich with garden fresh red leaf lettuce with some Duke's umhmmmm.... With a little salt and some pepper. Oh. Yes. My stomach just grumbled hmmm...

I didn't eat dinner.

I ate a couple of French fries... I did eat breakfast around
4:00 lol which may I add they (the kids) did an awesome job of preparing a late breakfast! I started off the liver mush in the pan, set out the eggs, the diced potatoes and onions I got from the store. I left the iPad open to a recipe for waffles. They made purple velvet waffles! Science lab right! Ha! Chase and Shekaya both have blue all over their hands even now close to 2am. But everything was delicious! And I smashed!

But now...yeeeaahhhh...I'm hungry again.

Y'all we had chili cheese fries for dinner! All my favorites- my amazing chili, French fries, AND cheese??? It goes down!

Chili cheese fries
Alice in Wonderland chili
1 jar Ragu cheese sauce
1 largest bag of tater tots (we wanted to use them but the largest bag was $6.99! For some potatoes!! I need to learn to make them for that price!! Haha!!
Ketchup


Alice in Wonderland chili

1 lb. ground turkey
1 yellow or Vidalia onion, diced or chopped
2 cans your favorite hot dog chili (I use whatever is on sale)
Ketchup
Salt
Pepper
2 heaping tablespoons of sugar

Brown your meat. Add onions.  Season with salt and pepper, basil, and seasoning salt. After completely browned, add chili, a generous nasty squirt of ketchup, and sugar.



I fry French fries in the big stock pot using either vegetable oil or olive oil.

Throw. You some fries on the plate, then add some chili and some cheese sauce and ketchup if that's your thing...and get ready to see French fries disappear!

Tonight, I realized long after everyone was in bed, that nobody even mentioned anything about drink! I bought two jugs of Minute Maid, which was still in the freezer where I left it! Shame, shame it is! Lol but that shows just how yummy our chili cheese fries really were!!!

Hello everybody, I prepared my meat in the crockpot. I have become a fan of the crockpot, one reason is because it’s easy clean up and the other is you put it on and leave it with no worries. Not to mention the taste is fantabulous (it is a word, I say). From meats, and veggies to desserts, I have prepared some of everything in the crockpot. This time I prepared beef stew, simple yet tasty.
We always look for things to be simple in life, with no twists and turns. When those bumps in the road come we act like that is the end of the road, and there is nothing more that can be done. This is a test of faith and maturity, how we respond initially to the situation and then proceed shows how mature we are and how strong our faith is. Always remember that God is bigger than anything that you could be going through. I’m learning this and trying to apply it to every situation, sometimes I forget then I’m quickly reminded. Don’t let those bumps in the road stop you, they don’t when you’re driving in your car, so don’t in life.



Crockpot Beef Stew

1 lb. Beef Stew

4 cups of beef broth

¼ cup diced green bell pepper and yellow onion

2 bay leaves

2 tbsp. minced garlic

3 tbsp. vegetable oil

Salt and pepper

DIRECTIONS

Cut crockpot on high setting, pour in the beef broth and add the garlic bay leaves, peppers, and onions. Clean and season beef. In a large non-stick skillet heat the vegetable oil on med-high heat, add meat. Cook until brown, about 5 mins. Pour the meat into the crockpot, add seasonings as you choose. Cover cook on high for about 45 mins to an hour, then cut down on low. Cook overnight or for at least 4-6 hours. Enjoy.

Hello everybody, I just want everyone to know that I'm tired. Today Marshmallow and I went to taste of Charlotte. For the unhip folks, it's an annual event held in uptown Charlotte showcasing different restaurants and vendors starting from Fri-Sun. You purchase tokens and have at it. We ate a lot of food, I'm still working on my sausage from J.J. Redhots, jjsredhots.com. Don't let the picture fool you, it's awesome. It looks like this because I had to put my napkin over it because I didn't want to share with the flies.

We parked kind of far away, so walking toward the event a man stopped us and asked us to call 911 because his back hurt. When he first approached I thought he was going to ask for money. I didn't hesitate to call, now yes 911 is a joke, it took forever for them to answer, then they hung up on me. Finally, the firemen came and was able to help him. God was very pleased, do understand when you do good work you will be blessed. What goes around comes right back to you. As we walked not even a whole block up the street another man stopped us and gave us like 6 or 7 tokens to the event. It was awesome. At the end we had 2 tokens left, so we had to pay it forward, I asked Marshmallow to pick someone, then we walked up on her favorite teacher ever, Ms. Patton (Math). My kid has had straight A's the entire year in this teacher's class, a true blessing this lady is. So after a pleasant conversation with her, we gave her the tokens.  Today was a day of paying it forward as some would call it, I just call it doing the work of the Lord. Whatever you choose to call it, do your part because remember, you do reap what you sow, good or bad.

Hello everybody, I want some salad but I didn't feel like fixing it. It's already made, I like my croutons and crackers (are in the hall closet). All of the extras seemed like too much work so I just ate some leftover pizza.
Sometimes it seems as if there are situations that seem like it's just too much, and you want to throw in the towel, whether it's dealing with relationships or taking care of someone or just the everyday things that seem to fall into your lap. Having the feeling like you are overwhelmed can cause you to shut down or seek solace in places that you should not. Before you lose it, in the middle of the chaos, stop and take a breath. If need be go sit and close your eyes, and let a few moments pass to calm yourself down. Then address the situation with a praying spirit. You'll see that love conquers all, and you will not be forced to accept ill treatment nor will you dish it out. Well, I guess I need to get up and get that salad, and enjoy it.

Hello everybody, today was an awesome day. It began great, the middle was great and the end is going to be awesome as well. I didn't cook at all today, I know bad momma (slaps hand), but I did have some amazing food. Marshmallow and I went to food truck Friday
.






Marshmallow and I both had fried fish. However, instead of chips, I got shrimp and collard greens.
I was really good. The fish was crispy and seasoned good. It tasted really fresh also. The greens were good, different than what I make but good. I could see they use garlic, onions and I tasted spice (maybe cayenne pepper, I'm not sure). The gentleman that took our order was extremely nice. He offered us seating and everything. If you go to food truck Friday and Comfort Foods on Wheels is there, do indulge.

Hello everybody, today was a blessing. Not saying that everyday isn’t, but my lovely daughter ‘graduated’ from the 8th grade. This is a milestone and one that has brought me so much joy. She didn’t seem excited, but I can understand she has 4 more years to go. However, she is excited about high school and all it has to offer. Of course as any parent I’m nervous; just like there are good things offered, there are bad ones as well. I will not worry about it because the God I serve is bigger than anything that could ever happen. She has been taught the Word and understands what is right and acceptable. As a parent you have to trust yourself, know that you taught them right and it is still a process. You taught them right from wrong and what God and you want from them. Pray every morning that they are covered and for God to keep them protected. Love them and loosen the knot. Love your children and laugh with them…it’s good for the soul.

Hello everybody, yesterday was a dedication to Pnut. For those of you asking who that is let me inform you. She is my lovely middle sister Denishie (yes, our names are very similar). I made a dish that she is known for making and doing so very well. I like to call them Pnut’s sloppy joes. They are wonderful just like she is. She’s loving, kind and very thoughtful. She loves her family to life. There is nothing like the love and support of family. It’s supposed to be that family is closer to you than anyone else, by your side through the thick and the thin. Some families are just that and some are not. It doesn’t matter, for you be the one that is there for family. Do your part beginning with prayer. You don’t have to like the sin they are committing, but love the person.

1 28 OZ CAN OF MANWICH

¼ CUP OF GREEN BELL PEPPER DICED

¼ CUP OF VIDALIA ONION DICED

I CAN OF FLAKY BISCUITS

2 CUPS OF SHREDDED MOZZERELLA CHEESE

1 TBSP SUGAR

SALT AND PEPPER

DIRECTIONS

IN LARGE SKILLET OF MED HEAT BROWN GROUND BEEF. DRAIN, ADD PEPPERS AND ONIONS COOK UNTIL TENDER. RETURN MEAT TO THE SKILLET AND ADD MANWICH SAUCE. STIR AND ADD SUGAR, SALT AND PEPPER. PREHEAT OVEN TO 425. ON A COOKIE SHEET LINE WITH FOIL (FOR EASY CLEAN UP) AND SPRAYED, PLACE YOUR BISCUITS. TAKE YOUR FINGERS AND SMASH THEN SREADING OUT THE SURFACE AREA. THEN TOP ALL OF THE BISCUITS WITH THE MEAT MIXTURE AND TOP WITH THE CHEESE. COOK FOR ABOUT 10-15 MINUTES JUST FOR THE BISCUIT TO COOK AND THE CHEESE TO MELT. ENJOY

Hello everybody, today is a beautiful day because God gave me another day to get it right. So I’m starting it out getting some house work done. My gourmet breakfast this morning consists of, wait for it…….frozen waffles and milk (thought it was going to be an egg frittata huh...lol).  I did cook though, I started my dinner, which will be another post so calm down.  I cleaned the kitchen and bathroom. Smells good in the house now, not like syrup. I also made lemonade, which tastes divine. As I was making it I thought about yesterday and how I was disturbed about something that happened. I had to remind myself that the devil’s sole purpose is to kill, steal, and destroy.  I will not allow him to do that especially when Jesus died so that I don’t have to, is not life worth fighting for? His was, so I will. Reconciliation is key to a dispute, don’t let anger and pride (the devil) take your joy by allowing you to hold grudges and not apologize for your actions. People deserve respect and love, you actually owe them that. So when you have a dispute, apologize for your actions it will mean the world to them, repair the heart and mend the relationship. God will totally be pleased with you. Like they say when life hands you lemons, make lemonade.

Hello everybody, this morning has been a little rough, but I still give God all the glory, honor and praise. I will not let the enemy still my joy. I’m gonna eat my grits and crispy bacon
(heaven in my mouth) and enjoy my day. When do you realize that enough is enough? We try to “tough” out situations that are breeding grounds for chaos and try to justify the reason for dealing with it any longer than necessary. Why, is it because of love, loneliness, or fear of the unknown? For whatever reason we endure it we lose a little piece of ourselves in the process. If there is always confrontation and anger then there is never a compromise. Don’t lose yourself, the things that you want for your life and the life of your loved ones (children) are not up for discussion and never should be. Stand your ground because God has something magnificent waiting for you, but not until you, “take out the trash.”

Hello everybody, I know you’re having dinner right now, so you’ll have to have this conversation at another meal.  While I was cooking dinner today I was on the phone just telling them about what my Pastor spoke on today. We had fried pork chops, greens, squash, rice, and gravy. The gravy recipe is below because it seems as if a lot of people don’t know how to make it. While on the phone I told them that it seems like he was with us yesterday and was in on our conversations that we have had lately. It seemed like everything he spoke on was directly to us, it answered questions and confirmed things alike. God spoke through my pastor giving us confirmation on things we have discussed. As you are having conversation a meal time, ask the question, “What feels right to you?” Listen to the various answers and take note of them. This is a great way to see how others view their actions and behaviors. This also gives you the chance to see how things can be changed for the better and pull you all together as a unit. It’s time to lose the attitudes and stop hiding behind the smiles and holding things in and talk it out. Pray about anger and being quick to get angry it only causes you to act or say something foolish. Holding things in only allows stress and anger to build up a resentment that can cause not only broken relationships, but health issues and even death. Wake up, pray, laugh and love, it’s what is best for all of us.






GRAVY

3 tbsp. vegetable oil

¼ cup sliced yellow onion

3-4 tbsp. flour

1 cup chicken broth

Salt and pepper

DIRECTIONS

In a skillet on med heat sauté your onions in the vegetable oil for about 10 seconds add the flour. Cook until golden brown (it will start to have a thick consistency). Add chicken broth, stirring while getting all of the flour from the pan. Turn your heat down, and continue to stir the gravy, if it seems to thick add more broth a little at a time. Season and enjoy.

Hello everybody, I hope you all are having a blessed day. Church was awesome as always, the message was definitely for me. I was struggling to get up this morning because I was busy yesterday and up late (eating, don’t judge me). I had a wonderful tomato sandwich. Now you may say ewwww, but it is delicious. So simple, sliced tomato with salt and pepper, mayo (dukes) and bread (white). You will fall in love with this sandwich. You have to make sure it’s a straight from the garden tomato, like yours or the farmers market, the store bought ones aren’t the same. That’s just like people, they are one way on the outside and another on the inside. We should stop trying to be someone or something to someone else that we aren’t. Learn to love yourself and the things that aren’t right and that you’re not happy with change. If you’re one way at home but different out then you need to change something because that is being fake. Never treat outsiders better than you do your family, and definitely don’t treat your family bad. Love always, I’m sorry for the harsh tone, but get it together.

Hello everybody, I hope you all had a very blessed day today because I definitely did. I must admit that every day is one.  No cooking was done today, I ate pizza. However, I did eat lots of fruit today, some with whipped cream (don't judge me). I'm going to do better this summer as far as eating goes. I'm going healthier but tasty. In order for me to get there I had to have a vision. Once I got the vision and documented it, my path was set. Something else that would help you reach the goal is to document it, with a vision board. For those of you that don’t know what that is, it’s a poster with writings and pictures of the goals you want to reach. It helps you to get excited about things as you are choosing pictures and words to show those goals. It also helps you to visualize where you’re headed. As you complete one of the items you put an “X” over it, which propels you to keep going. Whoever created this was a genius. Get up, get those old magazines and give yourself a push in the right direction, and oh yeah and eat some fruits and veggies while you’re at it.

Hello everybody, tonight’s dinner were leftovers, smoked neck bones, okra, squash and collard greens. They were really good, is it me or does it seem like the food is so much better the next day. It seems like the seasonings have settled in and now it is ready to eat.  Life can be like that, we begin something and assume just because we finish that it’s ready for us to indulge when it’s not. Patience is something we all need in our lives, for some of us that may be a real challenge. When you start something keep reminding yourself to be patient, focus on the outcome that you want, work hard and enjoy the journey. Sit down observe your result. 2 LBS CROOK NECK GOURDS (YELLOE SQUASH) SLICED IN CIRCLES

SQUASH HAS A LARGE WATER CONTENT SO YOU WON’T NEED TO ADD ANY. ADD YOU SUGAR AND SALT AND PEPPER. TURN DOWN SLIGHTLY AND COVER. COOK FOR ABOUT 35-45 MINUTES. ENJOY!

Hello everybody, hope ya’ll are having a blessed day thus far.  I was on the phone while fixing me a small breakfast. We were talking about relationships and how he was attracted to certain characteristics. We as individuals always seem to look for approval or validation from someone. Especially in relationships, we forget about what’s important, love. No matter what type of relationship it is, friendship, romantic, family or even business it should be approached with love and respect. We as individuals need to learn to do things so that we are following our “inner man.” This way you are doing the things set for your life by God. You won’t need the validation from anyone and you’ll be pleased and happy. This will allow you the space to walk in love making the relationship better. My sausage and grits were good while we were talking.

Hello everybody, today has been a great day so far. Went to the farmers market to get some fruits and veggies. I get overwhelmed sometimes because you want everything but know that if you get it and cook it, the trash is the next home for it. Control and discipline are a vital part of life that some of us struggle with. In order to be successful in anything these two things are a must. With weight control, getting out of debt or even grocery shopping you must have some level of control and discipline. I saw so many things I wanted like peaches, plums, strawberries, blueberries and cantaloupe oh my. We have watermelon that we need to finish so I left those lovely fruits there. Next trip I will get them and make a wonderful fruit salad. I got some collard greens, okra and squash, for tonight’s dinner. Never too many green veggies. Because I was able to control my shopping I was able to save money and not waste. Even though you want something, doesn’t mean you need it. Your “outer man” is always wanting something that you don’t need, which causes temporary satisfaction and long-term complications. Listen to your “inner man” use that discipline to control the situation. That long-term satisfaction is very rewarding you’ll lose those pounds, pay off that bill, or not waste food.




Southern Steamed Okra

3 lbs. fresh okra

1 cup yellow onion diced

3 tbsp. vegetable oil

2 strips of pork fat back meat

Salt and pepper

DIRECTIONS

Rinse off okra and cut into bite size pieces discarding the end pieces, set aside. Rinse off fat back meat to remove excess salt and dry with paper towels. Put your oil in a large skillet on med heat, once hot place you meat in the pan, and cook for 3-4 minutes till meat browns. Remove meat and place onions and okra in the pan. Slightly turn down your heat and place lid on skillet and let steam stirring occasionally. Let it cook for about 30 minutes. Okra will be cooked and tender, add salt and pepper according to your tastes. Enjoy.
